You have to copy the PNGs over the default gnome ones, for example copy soffice_calc.png to /usr/share/icons/hicolor/48x48/apps/ooo-calc.png (Path for standard icons in ubuntu hardy, gnome as desktop. This is a good icon-theme idea; but, for a great integration in Gnome, you can make same icons with Tango-HIG style? thx
